If you’re anything like me – health conscious, but more inclined to grab something crunchy or bread-like than a piece of fruit – you’ve probably found yourself with a few not-so-appetizing bananas on more than one occasion.
You know what I mean… the kind that’s aged enough to start having slightly brown skin and that sweetish smell, but not bad enough to toss. No one likes wasting food… but no one likes an overly ripe banana either.

My sister asks me to make my signature banana bread whenever I am home visiting. The perfect breakfast or snack food. Tasty as a simple slice, even tastier sliced and toasted (with cream cheese, if you’re a cheese fan like me). Toasting totally enhances the flavor and gives off that mouth-watering scent that makes it hard not to pop it up before it’s achieved the perfect crisp.
While I am also a huge fan of my typical banana bread recipe, I decided to try something slightly different this time. You see, I am trying to work on this little thing called being more aware of what I put into my stomach, so I tweaked my regular recipe by cutting back on certain ingredients and incorporating some others. For example, this one only has egg whites instead of a full eggs, it has a fraction of the butter and a bit less sugar. The apple sauce makes up for the lesser amount of sugar, though, so don’t get turned off just yet!
I wish I thought to get some walnuts for this go around because that would be SO GOOD, but if you’re living in Cayman you know that the grocery store closes unnecessarily early on holidays and I was too rushed to remember!
This is super moist and sure to go quickly! Trust me, this bread is delicious!
Low-Fat Banana Bread
1 1/4 cups flour
1/4 tsp salt
3/4 tsp baking soda
2 1/2 – 3 ripe bananas, mashed
1/4 cup apple sauce
1/2 cup brown sugar
2 tbs butter, softened
1/2 tsp vanilla extract
2 egg whites
- Preheat oven to 350 degrees Fahrenheit
- Whisk flour, baking soda and salt in a small bowl. Set aside.
- Blend softened butter and sugar. Add egg whites, mashed bananas, apple sauce and vanilla extract and beat until thickened and smooth.
- Slowly add flour mixture (I add a small amount at a time). Add walnuts if using.
- Pour into a prepared bread pan and bake for about 50 minutes, or until a fork comes out of the center clean.
Let cool for at least 20-30 minutes before you slice into that bad boy! Enjoy!
