One of my favorite things about cooking is proving my fiance wrong. Hear me out. Before I made these, I told Seware what I was making for my next blog post and he was like, “ehh, I guess I would have to try them first,” with a total stank look on his face. Usually he is pretty enthusiastic about what's next on the menu, but I could tell he was feeling iffy about this idea.

These are intended to be an energizing snack, jam packed with nutrients, but they eat like a treat. After Seware gave them a go-around, he was like, “WOW… usually I don't like ‘no bake' desserts, but I I have to admit that these are so good. Can I get another?” Needless to say he ate a handful in under 5 minutes.

These no bake energy bites are a slam-dunk in the health food department. They've got both chia seeds and ground flax (why choose just one?), which are super foods loaded up with fiber, Omega-3 fatty acids, protein, and other micronutrients. Flax is also high in antioxidants.

If you're on a health kick and are looking for a substitute for those in-between meal cravings for chips or something sweet, this is a great alternative because they taste like you're cheating but really, you're getting all of the above nutrients. If you've got kids that are on the go but you want to avoid unhealthy snacks or desserts, these are awesome for a quick bite of energy during and after school.

Word from the wise: toast your coconut flakes. Seriously, you won't regret it. You'll be left with an unexpected soft yet crunchy bite, with a nice undertone of toasty coconut flavor.

No Bake Energy Bites with Toasted Coconut

Ingredients

1 cup oats
1/2 cup chunky peanut butter
1/2 cup coconut flakes, toasted
1/4 cup honey
1/3 cup ground flax
1/2 cup chocolate chips
2 tbsp chia seeds
1/2 tsp vanilla extract
1/2 tsp coconut oil

Steps

  1. Mix all of the ingredients in a mixing bowl until well combined.
  2. Refrigerate mixture for at least half an hour.
  3. Roll mixture into 1-inch balls using your hands.

Store in airtight container in the refrigerator. Makes ~20 energy bites.
