Homemade Maple Breakfast Sausage – Freezer Ready!
  1. Combine all of the ingredients in a large mixing bowl. Place mixture in the freezer for 10-15 minutes to make it easier to manipulate!
  2. Line a baking sheet or other flat surface with wax paper and lightly spray with cooking spray. Spread the meat mixture over the wax paper, about 1/2-inch thick (or more, if you prefer thicker sausage*)
  3. Choose a glass or bowl with a rim that is of the approximate circumference that you want your sausage. Use this to cut out each sausage.
  4. Heat cooking oil in a large skillet over medium heat.
  5. Place breakfast sausage in the skillet in a single layer, careful not to let the edges touch. Cook the sausages for about 4 minutes on each side until golden brown. Cut your first sausage in half to make sure it is cooked through before removing from heat. Adjust the temperature as needed. Repeat this process in batches until all sausage as been cooked. Let the sausage drain on a paper towel before serving to remove excess oil.
Recipe Notes

*I began this recipe with 3/4-inch pieces which came out fine, but were slightly darker than I wanted, since they had to stay on longer to ensure that they were cooked through. All stove tops are different, so make your patties as thick as you want and adjust your temperature accordingly.
