How to Grill the Perfect Steak
  1. Preheat your grill on high and clean.
  2. If you don't have a smoking grill, create your smoking packet (as outlined above) with aluminum foil and smoking chips. Poke 1-2 holes in the surface with a toothpick and place on heating grill. Close the lid of the grill as it heats.
  3. Prepare your steaks by rubbing sesame oil into each side and generously seasoning both sides with kosher salt*. Add black pepper and optional applewood smoked sea salt. Drizzle with lime juice from wedge.
  4. When the grill has reached 450 degrees F, place your steaks on the grill and sear the outsides over high heat, about 1 minute on each side. If your steaks are bigger than 1lb or thicker cuts, adjust timing accordingly.
  5. Avoid moving your steaks before they are ready to retain the juiciness and flavor. Keep the lid shut as much as possible to maintain the temperature and to allow the smoking chips to flavor the steak. Use grilling tongs or a spatula to turn your meat when ready.
  6. For a medium steak, grill each side for 6-9 minutes, depending on the thickness of your cut. Adjust timing accordingly for different levels of doneness.
  7. Remove steaks from grill and place on a clean plate. Let them rest for 5 minutes before serving.
Recipe Notes

* It is OK to be completely generous with the salt. In fact, it should almost look like you are using too much salt, but you won't be! There should be a visible grainy layer on each surface. The thicker the cut, the more salt you will need to fully flavor the meat.
